Korean Style Chicken Noodles (Bibim-Guksu)

 

When you make chicken soup (dakjuk), you can make chicken noodles at the same time.

Here’s how to cook it.

 

 

Chicken Noodles

  1. Cut the chicken into bite-sized pieces.
  2. Pour a generous amount of oil into a pan and slowly cook the chicken over medium-low heat. Then add a little salt and pepper.
  3. Once the chicken is cooked, remove it from the pan and set the oil aside.
  4. Boil water in a pot and cook the noodles (I used somyeon noodles as I didn’t have knife-cut noodles on hand).
  5. In an empty bowl, thinly slice some green onions. For the seasoning, add 4 tablespoons of red pepper powder, 4 tablespoons of soy sauce, 2 tablespoons of minced garlic, 2 tablespoons of oyster sauce, 1 tablespoon of sugar, and 1 tablespoon of peanut butter.
  6. Heat the chicken oil from step 3 to a high temperature, then pour it into the bowl with the seasoning mix.
  7. Place the noodles in a bowl, top with the seasoning sauce from step 6, and add the chicken from step 3. Mix everything together, add a spoonful of vinegar, and you’re done!

 

 

Chicken noodles, we call it Bibim-guksu in Korea. Actually there are a lot of bibim sauces in Asian market. So you can get it from there and make it easy. However, homemade sauce is healthy and worth it.
