Chicken Noodle Soup and Porridge Using Costco Chicken Thighs

I was watching YouTube when I came across a video about chicken noodle soup.

Fortunately, I had some chicken thighs from Costco, so I decided to try making it myself.

While prepping the chicken, I found some thigh bones, and since there was plenty of meat, I spent some time thinking about what to do with the leftovers.

I decided to start by making a broth, so I added water to the pot and began boiling it.

As I was doing that, I remembered the chicken porridge I used to eat a lot when I was a child, so I decided to make that as well.

 

Chicken Porridge (Dakjuk)

  1. Pour water into a pot, add the chicken bones and the leftover chicken from the chicken noodle soup, and bring it to a boil.
  2. Once the broth starts to form, add the uncooked rice, whole garlic cloves, and a little salt and pepper, then continue to boil.
  3. Once the rice has cooked and expanded, it’s ready! (If the water level gets low during cooking, continue to add water as needed.)

I made the seasoning sauce with the thought of it being for two servings, but while eating, I felt it was a bit bland.

It felt more like one serving. I realized that next time, I should make more.

The vinegar is the key point; without it, the dish is very greasy, but the vinegar really balances the flavor.

Chicken porridge is always delicious.

If you don’t have chicken, you can still make a great chicken porridge using just chicken powder(chicken broth), rice, salt, and pepper. Give it a try!
